taco skillet dinner was a winner!

I wanted to use some prepped ground beef to make dinner tonight, but was tired of making the usual things. I went to Pinterest and looked through a bunch of ground beef recipes until one caught my attention. I ended up making a variation of a taco skillet dish that I found on the Taste of Home website that was somewhat like a homemade Hamburger Helper recipe. Bonus: it also helped me use up a package of frozen Mexican street corn that I had in the freezer! I mixed the browned ground beef, the Mexican street corn and its seasonings, a can of crushed tomatoes, and the remains of a jar of salsa together in a pot, added some hefty shakes of garlic salt and chili powder, simmered them together for a bit, then stirred in a handful of shredded colby jack cheese and called it done. I gave everyone the choice of rolling up the mixture in a tortilla or eating it with tortilla chips (like a dip). I diced up some avocado, pulled out some sliced black olives and sour cream, mixed up a bagged salad and put some carrot sticks and bell pepper strips on the table for veggie sides, and dinner was served. The original recipe included pieces of corn tortillas in the mixture, but I liked the idea of the crunchy texture of tortilla chips. Still, there are some kids in my house who don't like their food that way, which is why some of them rolled it up in a soft flour tortilla. This is the original recipe. You can see that I didn't follow it exactly.

That sounds delicious! Was there any left after the kids got done? I just cut a new watermelon. It's delicious... (I finally ate the rest of the last watermelon yesterday afternoon.)

There was about a serving's worth left, and one of the kids took it in her lunch thermos today with some tortilla chips and red pepper strips. I think she's planning to eat it like nachos. She took some avocado and shredded cheese to add to it too.

I looked it up, and the description is interesting. Is bagoong like a thick fish sauce?

@spiderdust yes it's kind of like a sauce, but I have only tasted ones made of shrimp.

@spiderdust I actually did more cooking than usual in Montana. I'll probably post about it at some point. Are you going to do a post today? I already did, but the title apparently isn't very catchy. I think it's a good one, though. Something to "motivate" me.
