My eggplant meal this evening

Broccoli, carrots & beef. Stir fry, added italian dressing for sauce.

I had broccoli and carrots. Stir fry eggplant, cutting to be just cooked, as I stir fry steak. I cut my small piece of salted and peppered meat. Frying together meat & eggplant on medium heat, lowering now a bit. Cut up my broccoli & carrots add to my stir fry, U like half cook broccoli and carrots. Splashed Italian Dressing, turn off heat up let simmer for about 3 minutes. Taste test, add more dressing if desired. Bon appetit.

@oahuwriter Unfortunately, I am lactose intolerant, so I can't eat ice cream, unless it's a kind made with soy or almond milk. Thankfully, more brands are starting to offer dairy alternative ice creams. I don't think Dibs has one yet though.
