I love noodles whether it's Asian or European. That's probably why a week does not pass by without a 'pancit' for a meal.
Pancit is simply the Filipino term for dishes cooked with noodles. Basically a stir fry but sometimes, a saucy pancit is palatable to taste.
There are countless varieties from town to barrios that claim a better concoction of pancit. The ingredients differ but the cooking remains the same.
A list of choices includes Pancit Bijon, Pancit Canton, Pancit Miki, Pancit Miki-Bijon, Pancit Molo, Pancit Lukban, Pancit Palabok, etcetera.
I think though that Pancit Malabon is ever my favorite.

Yes. I really don't know why pancit Malabon always becomes an instant craving. It's the taste, isn't it?

The one on the picture is from Linda's. We also buy from Dolor's or Ambers.

Pancit Molo has thicker noodles, starchy and salty. Pancit Malabon has thicker noodles, drier, and tastier than the Pancit Palabok. Also, no tinapa in Malabon.

Pancit Malabon is really tasty. Malabon is a city in Metro Manila where the pancit originated. The citizens kinda owned the recipe and called it Pancit Malabon.
Elsewhere, we call it Pancit Luglog or Pancit Palabok.

Yes, the noodles has probably emerged as a staple food, aside from rice viands. Food kiosks usually include pancit in the daily menu.
Filipinos have developed a cuisine that cater to taste. We truly have delicious dishes.
