I need to figure o ut lunch

Hubby made a recipe last night that he has been obsessed about. It is not happening again. However we are eating leftovers tonight. So I will not pack it in my lunch. They were "onion rolls". Thing layers of onion filled with ground meat and mashed potatoes. Not enough salt, not enough seasoning. Awful lot of work to prepare. I will take it easy for lunch today. Maybe just some fruit and peanut butter. Serving of milk. Coffee of course. At least I know what we will eat tonight.

I like stuffed onions, but they need spices, salt pepper and no mashed mixed to the ground meat, better some spicy sausage meat.

How do you roll up onion layers?

First you lightly boil the onion. Then make a slit from top to bottom to remove a layer. Then you just do the same way you would with a tortilla,put a spoonful f filling then roll from one long side to the other with the meat filling inside.

Going light with lunch at times is good. And for the leftovers for dinner, you can add some spices and salt to make it better. Can it be done??

Lol, does he know how you feel about those onion rolls? Doesn’t sound super appetizing to me although I do like onions (usually chopped up)

Yes, he does know. I have had some good onion casseroles, but this was not for me.

I tried, but the texture was really gross to me. I did put alfredo sauce on it and parmesan.

Sometimes new recipes are not always as good as we think. I have had that happen, thinking it looked good, tried it and never did again.
