I stuffed and cooked the other half of that acorn squash. Today I used boxed stuffing and ground beef and pork. Apples, onions, dried cranberries and walnuts. Celery and onions. It was very good. I have quite a bit of the stuffing combination left. I will put it in containers for my lunches next week. Also cooking. . . a quick and easy stew made from mostly canned staples from my pantry, that were given to me. This weekend we are well fed.

I like stuffed squash. I made some last week. It took quite a while but it was good.

I was thinking that must be one big squash, but then you said there was "quite a bit" of the stuffing left over.

This is making me want to do stuffed squash. I'm not doing it right now, of course. However, maybe I'll make it one of my first real dishes once we move. Except, I will likely use Beyond burger instead of meat. Here, I've ceded most of the place to boxes of stuff. I have more stuff that needs to be packed up. However, until we take possession of a new place, I have to maintain a minimal functionality here.

@GardenGerty It is. However, at least, a good chunk of stuff is ready to go when we're ready to take it out the door.

Wow. Just call me boring. I put an acorn squash into the toaster oven last night for part of supper. After it roasted I slapped some hummus on it and called it good.
