I have a sort of addiction to use leftovers
I just cannot accpt that any food goes to waste.
I have chicken broth (leftover from the day I cooked the checken breast), part of the breast (not much), some leftover pesto (not much), veggies and I bought some frozen beans.
I also have several frozen veggies and I would never be caught without onions, potatoes and garlic at home. So, after I finish this post, I´ll start my minestrone. I guess it will be an early dinner because I ate a late breakfast so I´m not hungry.
What are you having today?

I am the same way - it really bothers me if any food goes to waste. Even if a vegetable is about to get old, most of it I cut up and freeze and can use in a soup or stew later.
I am surprised at how many people exist who do not care about how much food they waste. It's ridiculous!
My biggest faux pas in the past has been to over-buying produce : I think I will eat much more than I actually do. Now, I try to make sure I use all my lettuce and freeze the rest of the veggies and use them later!

Since I live alone, I take out a mini bag to be taken to the garbage once a week. I eat most of what I cook, I share a bit with my dog Luna and everything that can be composted is put apart.

Minestrone sounds good. I will be having Thanksgiving leftovers today -- turkey, dressing, etc. Yum!

That sounds very appealing. I don't like throwing food as well I never do that, but I never thought about cooking something with the leftovers I usually eat them the way they are, huumm, I should totally try to cook with leftovers, thank you for the bright idea.

I just had some french fries, Minestrone is one of my favorite soups and I have made two versions one with smoked ham and one with Italian sausage,
