Tonight's yummy dinner...

Chicken thighs and potato latkes. The chicken thighs are seasoned and baking in the oven. I've already prepped the six Idaho potatoes for the potato latkes. I coarsely shredded them in the food processor, squeezed out the liquid as much as I could, and transferred them into a large bowl. Then added sea salt, dried thyme, onion & garlic spice blend, two jumbo eggs, and two tablespoons of flour. I am going to fry them up in a fry pan and serve with sour cream. I may even saute some onion for it. I think I will just cook one latke for now to see if it will stay together and I'll be able to flip it, and do the rest when hubby comes home. What's on your dinner menu tonight?

I visited a country buffet in a little town outside of where I live. Many people at work have been talking about how good it is, and I will say it did not disappoint at all.

@lovebuglena Fried chicken, fried pork chops, fried catfish, sweet corn, green beans, Mac & cheese, jambalaya, rice, potatoes, Italian sausage, lima beans, and peach cobbler. And probably many other things I can't remember! lol

I love potato latkes, we make rösti here in Switzerland, they are similar, but no eggs. I had sole meuniere with scalloped potatoes.

@lovebuglena Sole meunière is a classic French fish dish. It is prepared using a whole sole or a big filet, that is dredged in flour, pan fried in butter and served with the resulting brown butter sauce, parsley and lemon.

@LadyDuck Sounds delicious. I have no idea how to pronounce meunière. When I read this I pronounced it in the same way as manure. That's obviously wrong.

They are like potato fritters or pancakes. They are usually made to celebrate Hanukkah. The potatoes are coarsely shredded rather than grated.

My husband looooooves potato pancakes. He hasn't had them in decades. No onion for his though. We had Meals on Wheels - Stuffed peppers, noodles, mixed veggies and broccoli.
