I Made a Low Carb Almond Flour Bread Today

Today we got the snow I was hoping for. It has been snowing lightly all day and I have been very happy.
Since we were stuck at home due to the roads, I baked an almond flour bread which is low carb. I am still trying to follow a low-carb way of eating, but I miss having a sandwich.
The bread didn't come out the way I had hoped. It had 5 eggs in it, which made it taste fairly eggy. And it looks like a loaf of zucchini bread rather than a loaf of sandwich bread. It's also rather dry.
But if I put something moist on it, or toast it and add apple butter on it for breakfast, it should work out fine.
Have you ever made a low-carb bread before? If you have a good recipe, I would love to try it.

@RubyHawk Wheat flour has a lot of carbs in it so I am trying to stay away from that for now.

@Kouponkaren I’d never thought of that. I wonder how many less carbs than wheat flour.

@RubyHawk Hmm, that's a good question. The recipe I had didn't say how many carbs were in one slice. And they also said that the loaf makes 12 slices but I lice it thin so it lasts longer and I know I can get at least 18 - 20 slices out of the loaf. I don't need big slices. Just enough to make me feel I am nor being deprived of bread.

@Kouponkaren I am a northern Italian, we do not eat a lot of pasta as they do in the south. I tried pasta made with lentils and chickpeas, I prefer not to eat that eat that one. I make pasta a couple of times a week, that is not a large quantity. We are not following any kind of diet right now, we are both underweight and our blood work showed that our parameters are perfect. We eat mainly fish, vegetables and fruits.

@LadyDuck Next time I make it I will use egg whites instead of the whole egg. I think I read that you're Italian? I would think for you it would be hard not to eat pasta, which has a lot of carbs. I LOVE pasta but am trying some veggie pasta instead of wheat ones. They are a pretty good substitute, but not as good as the real thing. I will save earing real pasta for good Italian restaurants but use the substitutes when I have pasta at home.

@marlina I wish I didn't have to be into low carbs! Although the brad didn't turn out the way I expected, it is still a good substitute for bread in the mornings with my coffee. I have a slice with either almond butter or apple butter and it tricks my brain into thinking I am having real bread. That works for me!

@Kouponkaren Vince does nearly all our cooking which is fine by me. I do most of the cleaning up. lol

@JudyEv I like to bake more than I like to cook. But you know the old saying, "Man cannot live by bread alone!" Neither can women. So I am trying out a lot of healthy recipes lately also.

Courtney may e able to help you. I know she has made different ones. With a little research you can find a couple of keto friendly breads in the stores. I found a nut based one that was good while I was doing that diet

@Janet357 I just followed the directions. Some people left comments about how their bread never rose and didn't look like the blogger's who wrote out the recipe and had a photo of her bread. But mine came out like hers.
