What do you do when life gives you limes?

I like the saying ‘When life gives you lemons… make lemonade!’ But this time life gave me limes - three nets of four, to be precise, picked up from the reduced section when I popped to the local shop for a few staples. They were too much of a bargain to miss. So what to do with them? Well the first two I used, along with the one lemon we had at home, to make lemon-and-lime curd. I love lemon curd and have used the same recipe to make other types of citrus curd as well. Lemon-and-lime curd was a big success. Then the remaining ten I used to make lime pickle. I like Indian food and enjoy chutneys and pickles with curries as well as with ‘everyday’ foods like cheese sandwiches too. And the pickle was quite easy to make. It took a while - about ten days in fact - but most of that time was spent infusing so it wasn’t difficult. Today was the final step and now it gets left in its jars to mature for a while, so not quite the final product yet. But I did lick the spoon after filling the jars and that certainly gave me a buzz! For sure I will use to make guacamole and a good Margarita. Sometimes I squeeze and freeze the juice in the ice trays.

@Fleura It's not yet warm enough for cold drinks. I like to add sliced lime to my sparkling water.

That's a good idea. Sometimes I also put a slice of lime or lemon in the ice-cube tray and then add water so I can have instant 'ice-and-a-slice'. But right now the weather is bitterly cold so I didn't feel like that!

How about a simple glass of water with lime as opposed to lemon? Why not search for lime mocktail recipes?

Yes I do like a slice of lime in a drink too, but there were too many to use just for that. Unless of course I made ice-cubes and dropped a half slice of lime into each.

I just bought a few limes today! Ohhhh, lemon-lime curd sounds divine!! Lime pickle - I've never had that . . . there are actual lime pieces in it? Lots of time involved but sounds like it will be so worth it !

I love lemon curd and used to make it with a double boiler, which takes time and patience. But now I have found a way to make it in the microwave which is much quicker and less likely to go wrong. As for lime pickle - if you like spicy food that's slightly sour I recommend it.

@Fleura I love lemon curd too - but I've never made it. I'm all for shortcuts . I love spicy/sour too . . . but my stomach can't handle it as much as I used to. What would you eat the chutney with?

@much2say Mostly when we make 'Indian' dishes I think. Although my partner loves to use pickles just to jazz up his lunchtime omelette.

This time of the year we get a load of tomatoes rather cheap. We make chutney of them for short time use. For two days maximum.

Do you mean they are only available for two days? Or that the chutney only keeps for two days?

@franxav The type of chutney we make here will keep for many months, even a few years, so it is worth making a batch!

I love curd, especially lemon, but passion fruit is good too! I used to lime pickle in curries, but don't use it so much now

Why, I put the lime in the coconut and drink em both up of course. I use extra limes in lime bars. Just like lemon bars, only with limes. I have used them in tea or in limeaid. I never got as fancy as you did. I may have to try those things now.

@Fleura You are right. There is also lemon chicken recipe that's pretty delicious too. But I guess it makes more sense to use it on fish.

So when life gives you lime..you have plenty of choices. I love pickles. Being an Indian I have grown up on them. Lime and mango pickles are my favourite. Raw mangoes are there in market but I am too busy to make pickles this time. Mom is making extra for me and I will bring it when I visit her in April.. Today I made raw mango chutney and it would be there for few days
