Belated March recipe report card

Better late than never, here’s my belated recipe report card from last month. Due to a busy month so far, I haven’t gotten a chance to get to it. So here it is for you to look over and peruse. If any recipe interests you, I’ll let you know. 1. Lynne’s Linguine Con Pesto Di Pistacchi—C-. Due to forgetting to remove the shells from the pistachios before they went in the blender, this meal became hard to eat and to work around the hard nuts. Next time I’ll make it for redemption this summer, I’ll know better. Everything else tasted good. No leftovers due to hard nuts. 2. Hot Honey Bangin’ Crunchy Cornflake-Baked Chicken—A+. I seriously loved this new version of breaded chicken with a hint of heat in the honey. It coated the chicken perfectly on both sides. It came out deliciously. Leftovers were divine and another hit. 3 Chicken Parmesan Stuffed Shells—A+. I loved this recipe and how it had a twist of two classic meals. I also loved the sauce as well. Leftovers were amazing to have for a second go around. 4. Hummus Pizza-A. —Simple to make and throw together in so little time. Loved the recipe and would make it again in a heartbeat. Leftovers scored high for me as well. 5. Easy Porcupine Meatballs-A+. So easy and just how I remembered making it with my late mother many years ago. This would be definitely made again in the future. No leftovers. 6. Seared Sea Scallops with Angel Hair Pasta and Buttery Marinara—A-. Another delicious hit with a new pasta sauce from my new favorite pasta company. I only wish they would be available at local grocery stores instead of spending money on it via Amazon. It came out so good and delicious. No leftovers. 7. 30-Minute Brown Butter Goat Cheese with Grilled Veggie Orzo—It was so easy to make your own brown butter for this recipe. But I loved how it all came together with the veggies and orzo in one scrumptious dish. Leftovers came out pretty good. 8. Italian Style Polenta Casserole—A. For a side dish turned main meal, it came out pretty good with some added flavor. I had plenty enough for leftovers. 9.Garlic Shrimp and Spaghetti Squash-B. Though I’ve had half of a spaghetti squash for the meal, I loved the way it became blended with the spaghetti squash after baking it. Full of delicious flavor. No leftovers. That’s it for this late month edition of my recipe report card. I’ll post my belated April recipe list tomorrow afternoon.

Not really. It's very tasty with store-brought hummus. Why do you think so?

Well, at least it didn't sound appetizing for you to try a vegan pasta dish?
