I want a potato croquette

Sad to say I love empanadas but I really find it tiring to do. It takes me the whole afternoon and I have to wake up early just to prepare it. My labor is not included in the costing of empanada. I want to give up on it as a business. Maybe I will still do it just a hobby or for the family only not for business. I like looking at pictures of potato croquette and I plan to sell it because it looks good and yummy. The problem I have with potato croquettes is they fall apart while I'm frying them. I have tested the recipe before and it is the problem I encounter. It didn't bind well and they fall apart. Have you tried making a perfect potato croquette? You think it is easier to make? Can I sell it?

@averygirl72 Honestly I think pizza is the most popular food in the US and maybe burgers lol. I like to try different things though, different recipes. I test them out on my family and a few friends.

They look tempting. I have not tried them and have heard of them for the first time. Hope that you land up with a good quick recipe which makes them bind well and not fall

@arunima25 Maybe I don't add flour to make it bind together

@averygirl72 Any idea where you might be going wrong? Maybe you should check the recipe again. You might be missing something important there. It's been long time and might be something slipped off your mind

Yes, I make them all the time and for me they are easy to make. Potatoes croquettes are delicious, but they do not keep well, so think twice before venturing to make those to sell.

Good to know. Why do they burst while frying? What do you mean they do not keep well?

@averygirl72 You must keep the potato croquettes inside the refrigerator, or the taste will spoil and they only keep for one day, maximum two. They burst if left in the fryer for too long. The inside gets too hot, expand, and cause the croquettes to split.

Did you add a little flour to the recipe? That should make it hold together.

I think I didn't add a flour but I see recipes that add flour. That is my mistake

I have never tried to make a potato cake. If selling it will help financially then you can do it for some time while you are looking for another job.

My mum make these very often. She also adds minced chicken to the potatoes and all kinds of herbs. I think you should fry these on low heat

I've never made potato croquettes, but I make chicken croquettes. They're not round, but sort of oblong three sided.

We made them at school and I loved them but I don't think I've made them since. Maybe you need to try a few different recipes to find one that doesn't fall apart.

I tried making millet croquettes before and the same thing happened to me. I found another recipe for something similar and it said to leave the ready mixed ingredients in the fridge for 15 - 30 minutes. So next time I suggest you do that. I did it with my Japanese style pancakes and the mixture stuck together better when I put it in the fridge for a while. Don't move them around in the pan until the mixture has bound together aswell.

Yes I think I need to put them in the fridge first for around 30 minutes to make them hold together

@averygirl72 That's right. I hope it works out for you. I need to try some more millet croquettes now that I know what to do to stop them falling apart!

Have you tried mixing an egg with the ingredients? Sometimes egg will stop things falling apart while they are being cooked. But this would be no good if it is a vegan recipe.

I think I didn't add flour in the mixture. I think flour will make it bind together
