From duck bacon to duck

Last night for dinner I made thin spaghetti with sautéed garlic, shallots, Cubanelle pepper, fresh cilantro, and duck bacon. It was delicious. Today I am going to roast a whole duck. I took it out of the fridge Monday so it should be defrosted by now. I have to see the actual weight of the bird but it will probably take between 2.5 to 3 hours to cook as it looks pretty big. I think I will just season it with a garlic/onion spice mix and stuff it with Granny Smith apples and dried apricots. I hope the duck will be flavorful and juicy. I’m really looking forward to it. How do you usually prepare a whole duck?

The neck and wings were hard so not really edible but the rest was really good.
