@RubyHawk I bake veggies all the time. The Spanish "escalivada" has eggplants, onions, sweet peppers and hot peppers. Some people add zuchinni but I prefer to put more onions or eggplants.

I made a really great omelet yesterday morning. Maybe it just tasted good because I was hungry for one, I'm not sure. I used a bit of shredded chicken, some red and green bell pepper chopped up with some onions, of course, and I had one single bit of broccoli, so I cut off a tiny dab of that to put in it to make it look good. Finished it with some of the last of my wonderful garden tomatoes, and a bit of Swiss cheese. Pure heaven, it was delicious. So filling, eggs are a good protein food.

Sounds perfect. There are so many ways you can add to an omelette that it just depends on what you have in the fridge.

@MarieCoyle Omelettes are the best way for me to take care of all my leftovers. I always add some chives or bits of bunch onions.

I even make omelettes with leftover pasta. Or with just cheese or nothing at all. Eggs are awesome.

@marguicha yes, it is. We never put rice in our ref. Our leftovers are fried and eaten for the next meal either lunch or dinner.

Wow. That's a great combination for omelette. As of now, it's 1:54am. My tummy said, I need to cook. I'm thinking what to eat. Until I found cereal. So, I heated up with one egg and a pinch of salt.
