Hello again everyone. How are you doing?
It's the end of another day, so I am back to share my journey.
Weigh in - still at 211.
Blood sugars - stayed mostly in the 200's again. Lowest it got to I think was 183.
What did I eat?
Meal 1 - We went to Arby's and I got a double beef n cheddar without the bun and no red ranch. I did have a few of my husband's fries (like 5)
Meal 2 - Costco 1/4 pound beef hot dog with cheese. Also had half a serving of cheetos (about 8 carbs)
Snack - sugar free jello
I still kept it pretty low carb even though I had a few fries and chips. Didn't track my numbers though for the day. I'd say under 30 total carbs for the day.
Tomorrow is my endocrinology appointment finally. Was supposed to be at the end of November but things happened and it got rescheduled like 3 times.
Not sure what he'll say, or think about how I am doing but I will report about that tomorrow. I am sure he'll check at least an A1c, but hoping he checks my insulin and thyroid.
I added the note about OMAD (one meal a day) in the title because I was wondering if that is something I should try. The less often you eat, the less you are spiking insulin. My trouble is that I can't eat a huge amount at once and with eating once a day I would need to make sure I was getting in enough calories. I will think about that for a while.
What do you all think about it all (anything I mentioned lol)?

One meal a day as a diabetic is never a good idea. Several small meals is a better way to go.

Eating several meals a day spikes insulin several times a day.... It may not be a good idea to go straight into the one meal a day thing but it is a healing diet. My doctor recommended intermittent fasting....only eating in a certain amount of hours (like 12-6). So far now I will try that (probably starting next week).

One meal a day isn't a good idea. I eat two unless I have a hunger day, which thankfully hasn't happened in a while.
I hope your appointment goes well.

@MommyOfEli2013 I can't eat just one meal a day. I need two. Three is too much unless I'm hungry. Lately, I haven't been, so that's good. Thank you.

One meal a day is fine if you eat enough calories/protein/fat etc... The less times you eat a day the better. Two is good too, which I will try to work down to... Dr. recommends intermittent fasting. I'll write about the appointment soon. That's good you can do 2 meal days, and have been doing good with that lately

A few years ago, I did try the one meal a day thing. It did not work for me. If I go too long without something in my tummy, I get all weird and light headed and then I crave ridiculous foods I don't need or even keep in my home. I can no longer eat a big big meal anyway.
For your sake I hope they check all of you, and give you the appropriate tests. That would be a relief no matter what, if you knew what all the problems are. Life with only meat, cheese, and eggs would be very hard for me, but I eat veggies and fruits and truly enjoy them, I know you do not like them. I hope the doctor has some answers for you, Courtney.

I may start by adding it in occasionally, once a week or so maybe. We'll see. Sorry it made you feel that way.
The doctor did order a lot of blood work; including thyroid. Didn't recheck my insulin I don't think. My A1c shot up a lot though. I will write about the appointment in my next post though.
