Working on a carrot layer cake

I am bored so I decided to get going on a milk bar carrot layer cake. This is probably going to be a 2 day project but we'll see how much I get done today. I made this one once before during the summer and it was a big hit. My ex actually loves carrot cake. My mother would make him one every year for his birthday. I was planning to make this for his birthday last month but I was too busy to do it as it was right before Christmas.
Anyway that's what I'm up to right now. The cake is in the oven. Next up is the graham crust. I hate that she calls for just 1/2 recipe of it. I hate when I have to convert measurements.

I hope that you have a grand final outcome!
I am wondering what can we use in the place of eggs?
Something like Baking powder?

May be Bananas but I am not sure what is the substitute for Eggs in Eggless cakes or pastry.

I see NO resemblance between the picture and ANY carrot cake I have had in the past 50 years but, nice guy that I am, I'll try it!

Oh! That cake looks super yummy and so tempting.
