Sprouted potatoes in plastic bags

We have cool weather here at the moment that encourages sprouting of tubers such as potatoes and onions.
I found two such potatoes and I planted them in plastic bags The sprouts have grown well but I am not sure I will get potatoes. I will transfer them in pots later.
It is just the joy I get to see those sprouts growing every day. If I do get potatoes that's another story I suppose
I have read posts here about users being successful in growing their own potatoes.
Are you the one?

@allknowing I bought at Aldi, it's a good clean system to grow potatoes.

@LadyDuck The climate here is not suitable for tubers and just because it happened to be cool now they sprouted but if the weather turns warm I have no chance of getting potatoes.

If you have a place, I suppose they will grow better if they are not in pots so they can create more of it. I'm aware that some pots made for that purpose allow you to open the edges so you may harvest the potatoes without uprooting the entire plant.

@allknowing I see I think those pots that have access on the sides would be very useful for you especially during harvest time.
