What's for din? 3.13.23

Happy Monday night! I did a thing. I took a page out of @TheSoujourner 's book and improvised with two different things in the fridge to use them up before they went bad. I knew I wanted to make meatloaf. I had about a third of a pound of Jimmy dean Hot sausage and about a pound of ground beef that needed to be used up before they went a little south and became doggo food. So I mixed up both of those, added crushed-up Ritz crackers, a couple of eggs, a dash of this and a pinch of that, and of course some Ketchup, and threw it in the oven. The spice gave it a little extra kick and made a bigger meatloaf than I would have had if I just used the ground beef. So win-win. I also had some hamburger buns that needed to be used up by Wednesday, so I buttered and sprinkles them with parmesan cheese and made "cheese toast". I also made some mashed potatoes and gravy. So it turned into a pretty good meal and didn't end up costing too much since I was using up stuff. So that's what we had for dinner. What went on the table at your house?

It turned out really good. She child and Chris both had two servings. Then the dogs got the left overs on there dinner.

I love your cheese toast idea! I will often make garlic bread out of stale buns. We're having Pioneer Woman's chicken spaghetti recipe, only made with leftover turkey instead of chicken.

I used to make croutons out of stale bread, but salad isn't a big thing around here. Sooooooooo yeah. I also burned the $h!t out of my thumb. I don't think I have ever had chicken spaghetti, but I do have an awesome chicken chilli recipe.

I love to repurpose foods. It sure beats tossing them, I have always hated wasting food. It looks good to me! I made split pea with ham soup in the crockpot. The split peas were given to me by a neighbor who went to Florida, and ham and the huge ham bone were frozen from a holiday dinner over Christmas vacation. So other than a chopped onion, a bit of celery and carrot, it was an extremely frugal pot of soup--way less than $1. I will give some to my daughter tomorrow and the rest will be portioned out and frozen for another day.
