Yesterday I read about a Chicken Marengo. So I made my own version of it, remembering how my mom did it decades ago.
I had some thawed thighs. I cut off of spices due to my belly but I still added lots of diced onion, crushed garlic, bay leaves, leftover mushrooms that were not so fresh any longer, half a tomato I could save and some already made Italian sauce I always use for the color. I added part of the leftover wine that Humberto left here but just a bit. I´m taking it easy with my belly.
In fact, I am going to take to Dixie´s house a cauliflower and a broccoli. I love them both but dixie says I should not eat them.
I´ll take a mini nap after lunch and have Anita help me with my suitcase.

Cauliflower can cause gas so I wouldn't eat it if you are having tummy issues. Your chicken dish does sound good.
