Beef and sweet potatoes for dinner

I had a big piece of beef in the freezer. Not sure what cut it is. It's been there for a while. Finally decided to make something with it.
Once it defrosted, I cut the meat into cubes, seasoned everything, and seared each piece. I also sauteed onions, carrot, and celery. I put everything into my Staub (coq au vin) along with bay leaves, peppercorns, prunes, sauteed garlic, dried thyme, and water (as I had no stock) which I seasoned and added olive oil to.
After it cooked on a low flame for about an hour I added four sweet potatoes (or perhaps they are yams) that I cut up and seasoned beforehand. I put the timer on for another hour. I hope everything will be ready by then.
It smells good. My mouth is watering just thinking about diving in to all the goodness.
Seemed to take a while to do this. I hope it lasts for at least two dinners.

@lovebuglena I don't like prunes or sweet potatoes unless the sweet potatoes are raw.

@DaddyEvil I've never ate a raw sweet potato. I wish I knew how to tell apart a sweet potato from a yam. They are not the same. I only know what it is if there is that little sticker on it or if the shelf has a label on it.

@rakski yes. I liked how it came out. Looking forward to eating it again today. And tomorrow. It probably tastes even better today as it had time to sit.

It smells really good. Raisins and maybe even dried apricots would have been good. I don't have any unfortunately or I'd have put them in as well.

I turned the Staub off after two hours since the liquid came to a boil. The meat was tender.
