A sort of potato salad for lunch.

This could be a potato salad but I will add lots of leftovers that have seen better times. I have the rest of a lettuce that I will schredd, a couple of hard boiled eggs and leftover mayo. I have dill pickles to dice (I love that) and will see if the leftover chicken is still good to eat or if I´ll share it with Luna.
I also added half a carrot that is boiling with the potatoes.

@marguicha I keep the points to serve with butter and Parmesan and I used the harder parts to make the risotto.

I had rice and chicken nuggets, My mother made this very tasty and simple meal. She put potatoes and carrots into a pressure cooker. When they were ready we had them with mayonnaise and it was delicious,

We had lunch in a little deli place. I had hummus and veggies in a wrap, with a small side of fruit salad.
