Mango season!!

Decided to make pickles this time. I don't know how it will turn out, because I only know the ingredients to add Mangoes were brought from the market as our mango trees bear only a small number of fruits this year. It seems that the last rain with wind blows away all the flowers before they become fruits.
Gooseberries and bamboo shoot pickles were somehow turn out well and edible hope this will also turn out edible. Till then considering this as my trial and wait for a month .

Yes I saw in Delhi and other states like in UP, Rajasthan and Maharastra.
Once I saw and purchased but the masala wasn't good for me soI ended up buying all the raw mixed masala which we called Bara or Boro masala that includes 12 different masalas like mustard seed, fenugreek, cumin, cinnamon, black peppers and many more. Sometimes in fact it becomes 15-18 masala.

@psanasangma I see. There is an Indian restaurant near us, I will try to order Puri sabji, What's the dish? Is it a meat dish? Thanks for the information.

In India mango pickles are popular, Most of them eat with paranthas, roti, puri and along side with rice. Home made are the best that I ever tasted from one of our friend's house.
If any Indian restaurant happen to be in your country. Try Puri sabji, they usually give pickles but I am not sure whether they will give it or not in other country

One of the best choice to patiently wait, harvest and eat. We have one mango tree, we are hoping the fruits won't be infected by pest. These are main challenges faces by locals out here

They look good and I am sure that they will turn out well. I am done making few bottles of mango pickles and I guess that that would be enough for this year. My mom and grandma made Bamboo shoots pickles and they were yummy. I never got Bamboo shoots here to try.

I am hoping to turn out well! The fresh bamboo shoots are best to make pickle or fermenting it.
I have been to only Bangalore and Mysore I have not seen one particular Bamboo in Karnataka states.
There are only two types of bamboo we commonly consumes one is quite big and other one is kind of thinner than the other ones.

@psanasangma I have never tried making any here. I enjoyed the ones my mom and grandma made. They have bamboos surrounding their orchards of fruits. My mom gets those tender shoots for pickle. I enjoy it.

I haven't tried making gooseberry jam. I need to ask my sister to make it she is quite good in making jam.
They are quite good but it carry particular smell, if fermented it's unbearable for some people. I am not sure whether you'd like it or not but again it depends how it was made also.

We have mango trees but I do not like pickle Had a good feed of ripe mangoes The repeat flowering of one of the trees however I notice will not yield much as I saw tiny baby mangoes on the floor after that heavy shower.

We have the same situation! In the second or third rain, the wind and rain blow aways all the flowers and buds. Now the trees remains fruitless and one tree with very few fruits.

I agree with you !! I don't much how to make out of mangoes but I saw people from other Indian states makes lots of items that's why sometimes I missed Northern, Western part of India

For me, Ripe = peel and eat
Unripe = with salt and chillies but nowadays my teeth aren't allowing anymore after 2-3 slices

Mango pickles sound interesting. Some people make watermelon pickles here. I have had them before, didn't really care for them though.
