We had bacon and bell pepper quesadillas. I put lots of sharp cheddar cheese on them.
I do not want to spend visiting time grocery shopping, so we are creatively using what I have on hand.
I had a pound and a half of good quality, thick sliced bacon. I have red, yellow and orange bell peppers. I always have shredded cheddar. So this was a sandwich that was not a sandwich.
We ate a frozen fruit medley as well and we end the day full and satisfied.
It was a simple meal that did not cost a lot. The bacon was purchased at a distressed freight store and was very reasonably priced. Everything else was part of my regular shopping and I had it on hand. Bell peppers were 99 cents for three.

That sounds like a delicious dinner. And using things you already had rather than going shopping again does give more time for visiting. You can always restock later after your daughter goes home again.
I fried ground beef and ground pork together, added a sliced yellow onion and bell peppers with spices and ketchup for my lunch. It was delicious.

A store about ten miles from here offers a pork and beef ground blend we used to buy a lot. Your lunch sounds good.

@GardenGerty I found out a mix of ground pork and ground beef is called a "Boston blend". I'd never heard of it before.
