What did you have for dinner last night?

I'm on my second cup of coffee, but I still can't face the day. I did have some hash and an egg for breakfast, but I haven't left the house yet. Maybe that will change in a few minutes.
For dinner last night I kept it simple. I had Trader Joe's Palak Paneer, which is essentially slightly spicy Indian creamed spinach. I enjoy Palak Panner about once a month. Lamb Vindaloo is my current favorite Trader Joe's Indian offering, but last night I was in a spinach mood.
What did you have for dinner last night? And how is your Monday shaping up?

I like Palak Paneer too. I had it a few weeks ago. It wasn't from TJ though...I found it at Kroger I think it was. Last night was kind of junk foodie, hot dogs in crescent rolls, and peas.

@TheHorse Water, parsley, celery, onion, potatoes, tomatoes, garbanzo beans, some bacon fat, salt, carrots, all boiled together.

It's been an active Monday morning. But, Mondays at any hospital are good. Things seem to be progressing quickly around here. Last night I got a burger from the hospital caffiteria.

After church last night we had hot dogs and some baked beans. I might make some spinach tomorrow as I have been wanting some as well. No Trader Joes near us.
Basic Monday, did some laundry and other house hold chores.

I had a protein bar. Our housekeeper didn't show up yesterday because she was sick; so a lot didn't get done. Have a good day.

Oh! That palak paneer looks yummy and gives me an idea what I should make for lunch tomorrow

Since I ordered my groceries I am having all my favorite things like tater tots, pork sausage parties and gravy and for dessert cottage cheese and raspberry preserves. Monday was a cold one the temps are down again and the heater is on.

which was really good & for a desert I had
