This is a natural oil extracted from the fruit of an olive tree. It has 14% saturated fat, 11% polyunsaturated fat such as omega-3 and 6 fatty acids. But 73% is monounsaturated fat or oleic acid. This acid, studies suggest, reduces inflammation and has good effects on genes linked to cancer. It is a healthy choice for cooking because this monosaturated fat is quite resistant to high heat.
Extra virgin olive oil is fairly nutritious containing vitamins E and K, and is also loaded with powerful antioxidants. These may reduce the risk of chronic diseases. They help to protect your blood cholesterol from oxidation and to fight inflammation. These two lower your risk of heart disease. Chronic inflammation is the leading driver of diseases like metabolic syndrome, type 2 diabetes, cancer, Alzheimer's, cancer, arthritis, and even obesity. It may also prevent strokes which is the second most common cause of death--right behind heart disease.
Some scientists believe that 3.4 tablespoons(50ml) of extra virgin olive oil may have the same effect as 10% of the adult dosage of ibuprofen.

I love olive oil..I only recently realized that I do.
Dad used a lot of it when we were kids cooking those Sicilian dishes.

I know olive oil is healthy to use. However, it also is a bit expensive, So I have a small bottle to use some time and the rest I use vegetable oil,

@celticeagle since at times I do keep a small bottle around I thought why just use it all on cooking. Then I found some great suggestions and guess what? it can be part of your morning routine added to coffee or tea. See link

@celticeagle But we also use olive oil on our food. He always has a salad after lunch and it is seasoned with two tablespoons of olive oil and one tablespoon of vinegar. I almost never use butter to cook. I consume one bottle of extra virgin olive oil each month.
