This is a childhood favorite of mine. They no longer sell raisin bread with icing on top, so the contrast of sweet and salty isn't as great as it used to be. But I still enjoy it.
I use American cheese, but have also used cheddar and Havarti. The cheese you see here is white American although I think yellow American is more recognized (think Burger King and McDonald's cheeseburgers). I prefer white. The food coloring in the yellow cheese alters the taste, although it's very subtle. I butter both pieces of bread from crust to crust and then slowly cook them on the griddle until they're nicely browned on both sides and the cheese melted.
If you like raisin bread and grilled cheese, try both together some time. I also like chicken and tuna salad on raisin bread. But, grilled cheese is my favorite.

There was just something about that raisin bread with the icing on top...fresh from the toaster, yum! But no one seems to make it anymore. I make my own raisin bread, but it was yummy to buy that once in a while when I could.

I would probably try that. The Havarti sounds good.
