In the oven

Since I was up early, I made food for later. I have been meaning to make a rice pudding all week. This one has dates and nutmeg in it. Lots of vanilla and eggs. Some make a stove top ride pudding, but I prefer the kind that is like a baked custard. There is also a meal for later in the day. I had some taco meat left from last night. I combined it with a can of Rotel (diced tomatoes and peppers) and a can of black beans.I topped it with Queso shredded cheese. There is chunky guacamole in the fridge and sour cream and salsa. We have one meal left of the pork chops with mushrooms and onions, and I have spinach and tomatoes to make a yummy salad. Plenty of other veggies as well. I guess that is good use of my early rising time. Are you having anything good to eat?

My Mum used to make wonderful rice puddings, both boiled and baked. The smell of nutmeg still brings to mind those delicious desserts.

It all sounds delicious. For dinner this evening we are having bangers and mashed. Mashed potatoes with sausages and onion gravy. I will also have some type of veggie on the side.

That rice pudding sounds good! I should really make some myself soon. Today I had yesterday's leftovers, which was a tajine I made with fish, vegetables and couscous on the side. It was good.

Sounds delicious! I can't enjoy food in the same way, but that rice pudding recipe sounds like a perfect comfort food. Baked custards are the best Enjoy your meals!

There are quite a few Meals on Wheels lunches in the freezer; and that's what I've been having for lunch. I fill in the rest with protein bars and PB&J sandwiches. Have a good day.
