What’s happening today

I finished reading four books I borrowed from the library. This makes my total 14/75 books for the year. It says I am 7 books behind schedule. Wonder why. Perhaps I read 21 books by this time last year. Will see if I can go to the library today to return the books and pick up some new books to read. I’m thinking of baking mackerel for dinner tonight. Not sure if it will defrost in time. Maybe I should take it out of the fridge and keep it on the counter. I need to buy some lemons for it though as I’m out. I want to put lemon slices inside the fish before I cook it. It’s gonna be fish day for me. I had smoked salmon for breakfast. And I will have baked salmon with shell pasta for lunch today. It’s my leftovers from last night’s dinner that I didn’t finish. I’m gonna catch up on some DVRed shows while eating my lunch.

I usually do not each fish that many times a day. But it was good.

You're doing well with your reading. I'm lucky to get more than one book read in a year. I used to read a lot more than I do right now. Fish for breakfast, lunch, and dinner sounds fishy to me. At least it's good for you. Have a good day and enjoy your shows on the DVR.

Fish thaws quicker than meat. At least it seems that way to me.

Seems that way to me as well. Taking out of the fridge definitely help it thaw faster.

I did. There were two fish. We had one yesterday and will have the second one today. So easy to make. Salt and pepper. Put lemon slices inside. And drizzle some olive oil on top. Can probably drizzle it inside the fish too but I forgot to do that. About 25 minutes at 425F for a 2-3 pound fish. Turns out really good.
