Always lots of hacks for getting things done online. One I have seen is to bake your eggs in muffin cups. I did this for this week, so only six eggs. I am not impressed, but I will eat them. I like it better if I scramble them with other things and then make baked egg bites. I have lunches packed for these two days and I just wanted something easy for breakfast. Our weather is colder today. I wonder if I will have ice on the wind shield? There is still more trash to take out, so away I go.

I made some kind of egg dish in muffin cups one time. They were pretty good.

We saw on the news yesterday that there is an egg shortage in certain places. We are supposed to warm up today.

I used to cut up onions, peppers, and whatever else I had and scramble them in the eggs before I baked them in the muffins tins (like you said). I loved the little egg muffins that resulted. I hope you have a great day!

They baked eggs in muffin tins a few years ago at the Centre and put them on muffins for our brekky but now they just offer hardboiled eggs. Maybe I'll ask why they stopped baking them next time I go.

At least your eggs in muffin tins weren't inedible even though you were disappointed. Your baked egg bites do sound better but it's fun to try new ways of making things occasionally.

We are in a winter storm watch. I think I would prefer the eggs scrambled too. Have a good Thanksgiving.
