Taste of childhood .....a fried potato sandwich

So, having broken my arm, I am staying with my Mom , who is doing an amazing job of looking after me.
For lunch today, she has made me a fried potato sandwich, to which I added brown sauce.
Using some boiled potatoes that were left from our tea last night, it is a quick and easy and also cheap meal.
I love it as it is so so tasty.
It is also something that my Mom used to make me when I was a child.

It is delicious. A great way of using up left over poatoes too. I'm not old enough to remember the war but it may have come from then . People grew their own veg so they werent rationed.

@Traceyjayne I know many good dishes came from the Great Depression in the United States. People definitely found ways to stretch food and budgets, but it turned into some really good eats as well.

Chicken is my favourite and your Dorito chicken sounds yummy. It is so good that you can still have the dish and the memories of your Mom.

I loved mock fish which was made with grated potato, egg and flour. Another easy, cheap meal.
