Making a lower calorie egg and hash brown casserole this morning. Instead of traditional egg casserole with cheese this uses plain yogurt and cottage cheese and turkey bacon. It should be ready in a few, and I am hungry. Do you make any egg dishes? What do you like best? I am trying to get rid of a big bag of hash browns They are taking up too much room in the freezer

When we have eggs, I make a lot of scrambled eggs with different veggies diced up in them along with some type of meat. (Today will be Black Forest Ham with bell peppers and sweet onions for "lunch".) Pretty has a bunch of steamer pouches in the freezer that have cauliflower in them... I think she thought I'd eat those but I don't like them very well. She bought them last year on sale and they're still here.

This is baked in the oven. I like egg casseroles, and might make another one at some point. I want to make one with grits. Another thing that is really good is an egg frittata in the oven.

@snowy22315 Grits is something I just can't eat. They feel like sand in my mouth. Mom got really upset when I kept spitting them out.

Quiche is always good, I saw a recipe for a crustless one with bacon and mushrooms. That might have to go into the rotation.

One thing I never do is make lower calories anything lol Egg dishes, oh my god yes, My Omelettes are to die for, Each one contains 8 eggs and about 250g of mature cheddar cheese and some ham and other stuff. I love cried eggs, boiled eggs, poached eggs. When I met Yvonne I asked her how she liked her eggs in the morning and she said unfe....

Vince buys big bags of frozen veggies but you're right. They do take up a lot of room.
