Signed up for the staff BBQ next month

When I started working at the school I'm at now the staff used to do both a fancy retirement party and a staff barbecue on one of the last half-days of school. We are supposed to stay until the usual time we leave (1:50pm) even though the students are done at 11:15. Sooooo the staff, in our usual rebellious way, started having a barbecue. We were all still there but certainly not doing any work. The spreadsheet to sign up to bring stuff was sent out this morning. I took some time deciding what to bring. I'm well-known for my cooking and baking skills among the staff. I decided to go with a Carmine's salad which is basically iceberg lettuce and radicchio topped with sliced radishes, cucumbers, red onion, diced fresh mozzarella, diced provolone, tomatoes, kalamata olives, green olives, pepperocini, and diced salami. I sprinkle it all with dried oregano and serve with a vinaigrette made with extra virgin olive oil, red wine vinegar, kosher salt, ground black pepper, and more dried oregano. It isn't cheap to make but it is easy enough--just the chopping and dicing takes time. I might be an overachiever and make a dessert as well. That is still TBD.

Yes not cheap but I do enough coverages and tutoring to absorb the cost and to keep impressing my coworkers. Sometimes they pay me to make/bake things for their parties or even just a family dinner.

That sounds like such a fun and well-earned tradition—what a great way to wrap up the school year with some community and good food! Your Carmine’s salad sounds absolutely delicious (and beautifully thought out). It’s no wonder you're known for your culinary skills! If you do decide to go the overachiever route with dessert, I’m sure whatever you bring will be a hit. Hope the barbecue is full of laughter, great bites, and a well-deserved break for all of you!
