I love eggs in any form - boiled, half boiled, fresh egg in milk with a touch of brandy, egg scramble, egg curry, eggs in cakes, eggs in souffles, eggs in puddings ------what else?
I have not made egg omelette for quite some time and here I go That will be my lunch
What is your faovurite egg dish?
I take a boiled egg every evening as that helps me with my sleep

I also love eggs in any form except sunny side up.
I have one hard-boiled egg for breakfast in the morning.

@Beestring When we have lung confestion we beat a raw egg in hot milk with a touch brandy and drink it It helps a lot.

@allknowing I'm just concerned that if the egg is not well cooked, there is Salmonella bacteria.

Omelette.
When I make an omelette for Yvonne and I it contains 10 eggs, 500g of mature cheddar cheese, some bacon and tomatoes and it's a truly lovely thing to eat.

10 eggs?? No wonder mine do not flip as I use just 2 eggs. Do you really use 10 eggs. And Yvonne eats it all at one go?

10 eggs
Beat them up or whisk them.with electric whisk
Heat the oil in the pan and switch grill on
Pour eggs into pan when oil hot and add other ingredients as egg solidifies and starts to cook
Then add grated cheese on top and place under the grill so it's cooked on top, in the middle and on the bottom
Then cut in half and serve
Yvonne eats it all no problem
She can eat a 16 ounce rump steak with all the trimmings , so a small omelette is easy

I am going to try that poached thing you talked about - never tried it in tomato sauce But you will need quite a bit of the sauce for the egg to dip in. Right?
