Cabbage core

cut a cabbage this morning and a cabbage as you know has layers but this had a very hard core almost 3" in size in the centre
We do not eat the core as normal cabbages have it in a tiny strip. I removed the core and I am not sure it is OK to cook it but have never done that so far.
I feel throwing such a huge chunk is a waste.
Do you eat the cabbage core?

I'm sure you mean core instead of rind. A rind is the tough outer part of fruits, cheese, etc. The core is allegedly edible, but just like with lettuce I throw the core away.
I guess someone should tell Admin about the photos.

We do use the core
We chop it up and put it in soup with potatoes and carrots and other vegetables.
Why waste it?
It is perfectly edible

I like the cabbage core. I eat it raw while I'm cutting up the cabbage.

You can eat it the same way you do the rest. My bother used to ask me to soak it when I was making sauerkraut. I just threw it in the salt water with the shredded cabbage

No, we also don’t eat it. It goes straight to the compost pit along with other vegetable scraps and peelings.
