Preparing rice pudding is a long drawn process. My mother was good at it. You have to grind rice to a paste. scrape coconut and grind it corasely to extract juice, in three stages Cook the paste adding the third lot of the coconut juicie and keep stirring as it thickens put the second and first stage of coconut juice, jaggery, cardamom powder and cashew nuts. The stuff will thicken and when it does pour it in trays to which ghee has been applied. Cool it and cut into pieces.

We do it a lot differently than you do. Wash rice Add washed rice to pan Cover with milk, add some cinnamon and nutmeg and sugar Add milk and slow cook on pan Or do basically the same in the oven Yum We even have rice pudding ready made in tins

My grandmother used to cook hers in the oven. Delicious I’m happy with the tinned version these days. Quick and easy.

I’ve never heard of rice pudding made this way. My grandmother used to make hers in the oven. We used to fight over the skin that formed on the top. I just buy the tinned version now. Ambrosia - delicious.
