What's going on the dinner table tonight? Share with us! I'm making chicken saltimbocca from the Carmine's cookbook. I made the brown sauce earlier and now have the sliced chicken breasts soaking in buttermilk. The buttermilk step isn't part of their recipe but I have it on hand and have found that it helps to tenderize and keep the chicken juicy. I will have way too much once I pound it out and cook it but I will share with neighbors and put the rest in the freezer. To go with I will make some jasmine rice in the Instant Pot and saute some yellow squash and onion. It will be anything fancy in my world but it certainly will be fancier than a lot of people who don't cook will be having tonight. That's what is happening here. What are YOU having? I want to know!
