What is your way?

Looeyville's discussion about mac and cheese got me thinking...It seems like everybody has "Their way" to make mac and cheese, a family recipe, adding eggs etc. It seems everybody has a different way to prepare it, unless it is in the box type, that is pretty straightforward, but if you are actually making it from scratch, how do you make it? What do you put in it? I personally like a Civil War..Mac and cheese. It's made with parmesan cheese, because apparently it was hard to get cheddar in those days. I enjoy lots of different mac and cheese types though. Care to share your recipe for mac and cheese?

I make it several different ways. It depends on my mood. If I bake it I put an egg in it. I like to put more than one type of cheese at a time.

I have never made it with an egg in it, but that is popular in the South. I guess if I grew up down here I would do it.

Yep lazy but who among us hasn't resorted to that? I have several of those packages of easy Mac here now. I eat if I get a yen.

I have never made it from scratch, but my neighbor used to sprinkle his with breadcrumbs, and that made it even better. He used Parmesan too.

The version I usually make is based on a recipe that I received when I bought a Paula Deen baking dish from Kohl's years and years ago. I can't find it online. It calls for condensed cheddar soup which is something I normally wouldn't ever use. I omit the eggs. It is really very good though. People pay me to make it for their parties. I do sometimes make Kenji's stovetop mac and cheese which calls for just 3 ingredients. . . and maybe a couple more if you want to get crazy. It is fast, easy, and delicious.

@snowy22315 I'm not really into her recipes but I did enjoy watching her when she was on Food Network. The only 2 recipes of hers that I regularly make are the mac and cheese and her cheesy squash casserole. I've adapted them over the years so I can't even attribute them to her at this point.

@NJChicaa I have made her breakfast casserole before. You could easily feed 12 with it. My cousin once made Paula Deen's stuffing recipe for Thanksgiving. They were expecting quite a few people. When she told her mother she was going to double it, her mother had her doubts...They had stuffing out the yin, yang..couldn't even find enough containers to store it in. That's my Paula Deen story.

Yes, Thanks. You gave me the idea though. I just was thinking though most people have a way they like to prepare it

Yvonne is the macaroni cheese queen. First she cooks the pasta in boiling water for a few minutes Then she puts it on a pyrex dish and adds the bechamel sauce she makes, She has already added a lot of grated cheese to it Then she puts a lot of grated cheese on top and puts it on the oven until it is ready She uses salt, pepper, and mustard to sesson

@snowy22315 It really is. She fronted the busiest cafe in the place we lived before and she uses the same recipe and process the cafe did.

I normally use Great Value boxed and I add some shredded cheddar cheese to it or mixed cheese to it. I hate Kraft Mac & Cheese in the box. It's gross to me. Made from scratch: just add some milk, cheddar cheese or mix different kinds of cheese, butter butter and top with a little black pepper. Yummy!

It"s easy enough to make from scratch, and more nutritious too rather, than eating that fake cheese powder.
