What happens if you don’t eat your artichokes

Little One is partial to artichokes, and since she isn’t a great fan of vegetables in general I thought I would try growing some for her. This has been a partial success (I have one plant, which is surviving and produces a few, but isn’t exactly bursting with vigour) but this year one bud formed and grew just as we were about to go away for a few days, and although they seem to develop quite slowly, by the time we got back it was too mature to eat. So I just wanted to share with you what artichokes (which are the scaly flower-buds of a thistle-like plant) actually develop into if you leave them. Isn’t this the most amazing vivid colour? That looks like a scaly anteater broke open... Not quite the right color but I knew there was a reason I didn't want to eat an artichoke.

These are just beautiful. I know some people grow them for the flowers and don't bother about the eating part.

It really is vivid. I'm not sure But I think I have seen them growing wild. Is this possible I thought they were thistles
