Corn flour pudding is ready

I gave it a try. Easy to make but not fully happy with the result. Patience is not my middle name and that could be the reason why I did not wait a bit longer for it to set better. Corn flour pudding is normally white but this you will see has a yellowish tinge and thatis because I used jaggery instead of sugar. Jaggery is healthier Will make it once again and will see to it that it sets better

When I make the corn flour pudding I also add eggs to my vanilla pudding. The proportion of corn flour is 30 gr for half liter of milk, 120 grams of sugar and 2 eggs. I mix all the dry ingredients in a pot, heat the milk and pour over the dry ingredients whisking. Put back on the stove and cook for a few minutes until it thickens.

That is something like bread pudding I just wanted to know how corn flour with just milk and jaggery turns out It was tasty Ofcourse bread pudding is steamed. I first add a bit of water to the corn flour and mix it thoroughly before adding it to the milk and jaggery mix. and then cook it on slow fire If you are pouring hot milk to the dry ingredients that has corn flour in it that will form into lumps. When do you add the eggs?

@allknowing NO if you slowly pour milk while mixing with a whisk the corn flour does not form into lumps. I do this all the time.

I’ve never used corn flour for baking, only for thickening. I’ve also never used “jaggery”. What’s the benefit over sugar?

I have not used corn flour for baking either. Jaggeery has several health benefits unlike sugar although sugarcane is the basic product for both Corn flour is a binder, It keeps stuff from breaking such as cutlets.

@LadyDuck It’s very expensive here, so only the well-to-do could afford cakes made with it.

@Orson_Kart Corn flour is perfect for some baked cakes. Sponge cake is softer using corn flour.

It looks yummy. I'm inspired to try making it in my kitchen. Perhaps, I'll add cashew nut or groundnut and kismis on it.

Wow you made it, good you have used jaggery instead of sugar it's more healthy. Love to have it. I am sure the second try will make it perfect.
