Last night I went full chef mode and made homemade enchiladas. Actually… I made two pans of them because apparently I live in a house divided. I wanted green chile enchilada sauce—because flavor and spice are the whole point—but the rest of the crew prefers their taste buds to remain intact. So, two separate pans it was: one “mild and polite,” and one “might make you sweat a little.”
You know the drill—brown up some ground beef, hit it with taco seasoning, roll it up in tortillas with some cheese, drown them in enchilada sauce, sprinkle more cheese on top, then bake until the kitchen smells like happiness.
It was an easy dinner, everyone got fed, no one cried from spice levels (except maybe me, from joy). Full bellies all around—win-win.
So that’s what was on our table last night. How about you? What did you munch on, and should I be jealous?

@thislittlepennyearns Yeah. They just don’t seem to focus on anything but the big things. Even if the little things annoy me more.
