Gooseberry Fool

I just learned about this British dessert. It is made with stewed gooseberries, Greek yogurt, whipped cream, sugar, and some like it with shortbread. I love gooseberries. It is a bit late in the season for them. They are usually best in June. I haven't had any in probably 60 years.

Stewed Gooseberry. I wonder how do they taste like when they are stewed.

They grow on a bush. Are very tasty. It's been so long since I've had one I can't describe the taste. I just know they are good.

I have some apples that I might stew later. I have a recipe for a puffing top. It's just a cake mixture that you put on the top of hot fruit.

That dessert sounds lovely tangy gooseberries with the creaminess of yogurt and whipped cream must be such a nice balance. What a treat it would be to taste them again after all those years!
