Looking For Fall Recipes

I am looking forward to fall and eating more hearty meals. Haven't had much of an appetite with the heat this summer. But I want to find some new recipes for my daughter to try. I used to fix a Tator tot and mushroom quick casserole, but I can't remember what else I put in it. I Googled it but nearly all called for mushroom soup, and I don't care for it. Some did look good though and there were scads of them. I'm also going to try a chili recipe this year. I haven't made chili from scratch for several years. I think that a chicken enchilada casserole would be good too. Hamburger sure has gotten expensive. Of course, there will be potato soup and sloppy joes. I also watch a couple of channels on YouTube for recipes. Any ideas?

Yes, we will have potato soup. I taught my daughter how to make some good potato soup.

Chicken prices have come back down again. Especially chicken thighs. You can roast three of them in a baking dish with sliced potatoes and diced onions. That's always good. I butter the baking dish first, cut up potatoes and onions on the bottom and then put the thighs on top and sprinkle Seasoning Salt over everything and then add powdered garlic. Put foil over the pan and bake it at 350F for 40 minutes and it comes out delicious.

Yes, it is. And you can put whatever you have or want in it. I used to make a meat ball soup that way.

I used to make a Tamale Pie which was so good. Beef stew; but beef is so expensive....Turkey legs and thighs.

Tamale pie does sound good. Yeah, beef is usually too tough for me to chew.
