The fruits of my labour …..

So, as posted previously I have been almost buried in a mountain of cherry tomatoes. This years bumper crop has meant that we have been eating them til they have been coming out of our ears ….and still have loads left. On Monday I took the plunge and dehydrated some of the cherry tomatoes that we had picked on Sunday. I was so impressed with the results that I couldn’t wait to pick and dehydrate some more . The plants are at Moms as I have been staying with her for part of the week. So this afternoon I picked another huge bowl full of the little beauties. I dehydrated them for a total of 5 hours, checking them every so often. They seemed perfect. At the moment the new collection are in for their first three hours. Can’t wait to see the final result. Into the jar with olive oil they will go. Do you dehydrate fruits or veggies ?

@traceyjayne no. Do you do them in a slow oven and then bung them in olive oil?

I wash them, cut them in half, toss in a little salt and olive oil. I do them in the ninja on dehydrate setting. Five hours, checking often. Place in a clean jar and cover with olive oil.

I'm glad it's working so well for you! I do have a question, though... Why are you putting them in olive oil? You can store them dehydrated in plastic bags with a good seal. They'll last forever dried as long as you keep moisture out of the bags.

I haven’t totally dried them…..that is for future batches, as we have so many. The Mister got me some zip lock bags yesterday. I will get them at the weekend when he gets home.

Several years ago had a huge tomato crop, so now put in less plants. I did have a huge potato crop and was eating them for a long time.

All of these have come from just three plants. We have done really well this year.

Cool! We had a tiny survivalist store and sold things like dehydrators. Hubby did some dehydrating back in the day...years ago.
