The first 2 tries were good for over a week but eventually got moldy and had to be tossed. I'm trying again now that the temperature is a bit cooler and because I have a stupid amount of different types of flours here taking up space on my counter. Try try again!
My ex saw the mason jar sitting on the counter in the kitchen and he was like "WTF is that?!?!?!" Yeah it doesn't look so pretty especially because it contains so much rye flour right now.
Fingers crossed for a more successful result this time around. I have to be diligent about not skipping a day of "feeding" the starter. I've had good results with some sourdough "discard" recipes but I haven't made an actual loaf of bread yet.
I'm using the recipe from The Perfect Loaf. If I had borrowed it from the library first to preview it I probably wouldn't have bought it but I didn't so I did and here we are so I'm just trying to make the best of things.

I know what you mean about different types of flours...I keep not just white, but rye, wheat, and oat flours. I rarely use any almond flour so I don't have any of that right now.
Sourdough starters are weird. They either last for years and you just can't kill them, or they start out great and die on you. Keep trying, eventually it will probably take off and do it's thing for you.
