Made some buttermilk waffles

I am trying to use up a bunch of the sourdough discard that I have in the fridge. One of the things I wanted to make today is a batch of buttermilk waffles. I like to keep them in the freezer so I can just grab one on a busy morning. I don't have a toaster or toaster oven so I just toast in in the broiler part of the oven. The recipe yielded 6 waffles which is more than enough.
Later today after the visitation I am going to make some discard crackers. Tomorrow I'm going to make discard banana bread for the maintenance guys here as a thank you for fixing the heat on Friday. Hopefully that will use up most of it.

I freeze some waffles as well. When I make them, I just make extra and freeze them--also do the same at times for pancakes or French Toast. On days when son has treatments or appointments, it's handy to grab and heat for him to have a meal before we go.
I let my sourdough croak last winter. I am thinking of starting it again--I was going to do it last week, but it requires regular attention, and he has surgery this Tuesday--not sure of when I will be home or not, so it's best that I wait until after that. Oh, and I told my daughter about the bargain on rye flour I found on Amazon (for some reason rye flour is wildly expensive here!) and she ordered several bags for their bread making and for mine, too. Yay!
Probably a good thing I am not close by....I have had the discard banana bread before and it's so, so good! You wouldn't have any left if I was around, and I would gain 5 pounds!

How were they? I don’t know about sourdough buttermilk waffles…seems like syrup wouldn’t go well with them.

I'm glad at least the heat is fixed. Too bad you're not closer...I could go for some of your goodies.
