They were right it is the fluffiest omlet ever, and simply delicious. I read about this online. You take one egg, a teaspoon of both mayo and water season as desired place in ramekin or other small deep dish. I used a glass cooking vessel I have designed for the microwave which covers the item, with a top but let's it steam. Microwaved for 1 minutes..recipe said 45 seconds and voila! The best mini egg omelet you ever had Have you tried a small amt. ofImayo with eggs before? Try it and this little inlet. You can thank me later..

I have ramekins, but the dish I used this morning was perfect. You seem like a ramekin kind of gal Anna.
I am surprised you don't know where yours are

@snowy22315 - I have arranged a few kitchen tools and gadgets in three small boxes on the shelves in the garage. Now that we have all our cabinets re-arranged, I will bring them up.

Maybe you could modify your counters somehow so you can cook from a wheelchair.

@snowy22315 Much too difficult. I am still researching frozen meals; but they have too much sodium, fat and/or potassium..
