Making green tomato chutney ( part 2 )

So, last night I had the chopped tomatoes and onions layered up and sprinkled with salt. They had to stay like that overnight. This afternoon I put the spiced pickling vinegar in a saucepan with the sugar , and heated. Then added the chopped apple and sultanas. Simmered. Added the drain tomatoes and onions. Brought it to the boil and now it’s simmering …..it’s got to do that for about an hour ….stirring occasionally. The kitchen smells amazing ….but very vinegary !

It’s all done and ready to be put in jar later ….( it does taste delicious ).

Hope it turns out well. It generally improves if you keep it for a few months. I recently made grape and quince chutney, that was an experiment, will see how that turns out!

I will start a jar at Christmas as we have cheeses and cooked meats then quite a lot. The rest will be in the new year I think.
