My favourite lunchtime meal on Sundays: GITHERI

Due to the sufficient time I have on Sundays, I like to cook a mixture of maize and beans as my lunch. It takes 3-4 hour to cook the mixture to tenderness. I then drain all the water and wet fry the cooked mixture before adding selected spices and then return the drained water. A brief simmer will ma it have thick soup and nice taste. This type of food is common in the rural as well as urban areas. It is commonly referred to as Githeri. Have you ever eaten such a mixture? How do you call it?

I like all beans except black ones. I haven't eaten this mixture, but I enjoy mostly pinto beans with a ham hock added if they are affordable.

That is great. Beans are very nutritious. Ham hocks are very delicious but generally expensive.

It kind of sounds like what we would call a thick stew with cornbread. Or maybe beans and grits? My dad used to eat something similar growing up, only they’d let the beans simmer for about six hours to get the full flavor.

That is true. But for maize, one has to cook for long so as to soften them and improve palatability.
