The weather has been downright cold this past week, and no, this is not a dramatic Floridian exaggeration. We are talking actual nighttime temps in the twenties. That kind of cold calls for food with commitment.
So I’ve been leaning hard into hearty, cold-weather meals, and tonight was no exception. Dinner was homemade chili with cornbread, and not to brag, but I absolutely nailed the spice situation this time. Everything landed exactly where it was supposed to.
I also built my bowl a little differently. I crumbled cornbread into the bottom, drizzled it with honey and Truff hot sauce, added butter and cheese, then piled on a couple generous scoops of chili and finished it off with sour cream. A layered masterpiece.
Do I want to know how many calories were involved? Absolutely not.
Was it worth every single one? Without question.

I haven't paid attention to calories since the last time i dieted and went to the gym regularly which was like 2013.

I needed some extra flavor lol.
My chili itself is pretty boring. Chili beans, black beans, rotel, seasoning and hamburger meat.

why both of them? that's wasting food, when you could make two seperate meals out of that.

We had chili and cornbread about a week ago, had it leftover another night, and I froze son two little containers. We love chili. Yours looks good!

There was just enough left to put leftovers in the fridge for me to eat lunch tomorrow. I have to clean out the fridge tomorrow.
