Brinjal is a lovely vegetable

In bengal brinjal is called begun. It is loved by everyone. There are different ones in which it can be cooked. It can be roasted with onions called begun pora. It can be cooked as vegetable curry with potatoes and eaten with chapatis.

Yes indeed they are Judy. And Brinjal is a really versatile vegetable. One thing I did with it was use it like lasagne sheets and made like a Ratatouille Lasagne with it. It was quite good

@sathviksouvik Mom grew them on our farm and I rarely ate them.

We call it an Aubergine and we do use it quite often And it is indeed used in Curry here too.
