What's for din? March 1st, 2026

We went over to Alabama this afternoon, mostly because they have the only still open Burger King within an hour from us, and because they have a Piggly Wiggly and I needed to grab things for dinner. I made homemade beef and cheese enchiladas. It was really easy to make, and pretty quick as well. She child was happy. She asked for them a few days ago and tonight was the first night I was able to make them. So that's what was for dinner here. What did you have? This is not pictures of tonights. But I make the enchiladas the same way every time I make them.

My kids like enchiladas. They aren't my favorite for some reason, not sure why. I do love fajitas, tacos and taco salads, etc. That's nice that you ask what they want to eat and try to make it for them.

Enchiladas are easy and have protein. I’d make them different if it wasn’t for the kids.

@thislittlepennyearns My son didn't think he liked fajitas very much, but he had not tried them in a long time. Now, he loves them, especially chicken ones. Mexican food is so adaptable, you can change out the meats, etc. and it's just all good.

I get them every once in awhile. Lll the bbq ones were my favorite for a long time.
